This is an excellent opportunity to experience living in a remote location that in the words of one resident artist, Geoff DeMain, requires a "mental toughness that few Australians possess".

The town has a population of approximately 18,000 and is isolated by distance and the harsh surrounding countryside.  However, Broken Hill is also known for having a quirky character that attracts people to visit and often stay, particular those of a creative persuasion such as artists and filmmakers!  To get there, Broken Hill is 1,165 km west of Sydney, 508 km north of Adelaide and is 849 km north of Melbourne.

The town has plenty to see and do and there is plenty within a day or two'' drive to quench your thirst for sightseeing adventures!

The Broken Hill Musicians Club is currently seeking applications from suitably qualified and highly motivated Sous Chef to join the team and support the Head Chef in leading the catering operations at the Club. The operation is currently open 7 days for lunch & dinner providing both a snack & A-La-Carte menu as well as daily blackboard specials.

As Sous Chef, you will work closely with the Head Chef and will be responsible for assisting in overseeing all cooking operations including:

  • Ensure all menus are to club specification.
  • Ensure all dishes are to club specification.
  • Ensure all recipes and preparation requirements are met.
  • Ensure temperature, seasoning and flavours are to specification
  • Ensures readiness for service and the pace is set for peak trade
  • Ensure all food is presented for service in a timely manner and in correct sequence
  • Ensure that the storage of food meets company and statutory health and safety requirements
  • Menu writing and design
  • Working to KPI's
  • Deal with any customer returned food in a timely manner
  • To provide a level of customer service across all food outlets that is at all times courteous, helpful, friendly, efficient and customer focused whilst ensuring compliance with the Health Act, Registered Clubs Act and the Liquor Act.

The job will be full time, with hours varying depending on operational requirements.

Successful applicants must have:

  • Commercial Cookery Certificate IV or
  • 5 years' commercial cookery experience
  • 2 years' Senior Chef experience
  • Club experience
  • Food Safety Certificate
