Head Chef

A premier Club on the NSW South Coast in a highly desirable location with many lifestyle benefits and with over 16,000 members is looking for an experienced, forward-thinking Head Chef who is passionate about the Food Industry. 

The Head Chef will be responsible for the Club's high-volume kitchen operations which produce food for a 300 seat restaurant, cafe, all day snack menu and functions. The ideal candidate will be a highly motivated leader with a demonstrated ability to effectively manage a busy kitchen in a multi-faceted catering operation.

RESPONSIBILITIES
  • Overall responsibility for the kitchen's daily operations
  • Manage and update menus to reflect Industry trends and meet or exceed Club patron expectations
  • Develop and implement robust food cost control systems and procedures including costing of all menu items prior to implementation 
  • Development of all materials to support delivery of all menu items to the standard required and meet food cost targets i.e. standard recipes, production methods, portion sizes and plate presentation
  • Effectively manage a highly efficient kitchen operation to optimise customer satisfaction and meet budget requirements.
  • Assist in preparing and monitoring efficient and cost-effective weekly rosters
  • Ensure all components of the kitchen operation adhere to food safety and WH&S Club and legislative requirements 
  • Staff training and development
To be considered for this position, the applicant must have the following attributes:
  • Demonstrated ability to manage a kitchen team to consistently achieve high standards of service delivery and to budget;
  • Sound knowledge of financial management as it relates to the catering industry;
  • Capable of working well under pressure and in fast paced environments;
  • High level of attention to detail;
  • Excellent time management skills;
  • Must be able to demonstrate loyalty with a clear focus on business success;
  • Competent computer skills and a working understanding of relevant industry management software;
  • Flexibility with hours of work;
  • Have knowledge of key legislative requirements in relation to the food industry.
Ideally the applicant will have a diploma in professional cookery as a minimum requirement and three (3) years employment in a Head Chef's position. 
 
This is a full-time position and will report to the Catering Manager. Salary is negotiable depending on skills and qualifications. 
 
The position is based in Ulladulla on the South Coast of New South Wales.
