This is a great little Club with a very solid food trade delivered through functions; the cafe and the lovely outdoor deck with a 'cook-your-own' barbecue set-up. The catering department made a profit of $43K last year and is trending towards another profit this financial year, no mean feat in a venue of any size, so the successful candidate that undertakes the Head Chef role will be walking in to a successful and stable environment.
The current kitchen structure is very stable and efficient and includes a Sous Chef and Casual Chef who are willing and able to work closely with the new Head Chef to achieve the desired outcomes. The ideal candidate will be a natural leader, someone that is willing to get in there and make things happen without losing their cool. The facilities are small, but manageable and the Board and Management are very supportive, so this is a fantastic opportunity for the right person.
Duties include:
- Provision of advice on the development of the Club's dining and catering policies and practices
- Supervision of staff in areas of control, including duty allocation
- Preparation of rosters, approval of overtime and staff training in consultation with the General Manager
- Conflict resolution between areas of responsibility
- Planning and organising special functions in liaison with the Functions Coordinator
- Planning and costing of menus, ensuring their profitability
- Rostering and planning staffing levels for particular functions maintaining 'wages to sales'
- Recommendations for catering staffing levels and training and development programmes
- Inspections of dining rooms, kitchens and storage facilities to ensure they are clean, functional, pleasing in appearance and meet health regulations
- Setting of quality and portion control standards and checking cooking equipment and facilities for maintenance
- Ordering of all stock
- Developing and monitoring workflow plans
- Management of OH&S in food service and food storage and preparation areas
- Developing & managing HACCP
Qualifications and Experience:
- Trade Qualifications in Commercial Cookery are essential
- Formal Management qualifications would be a definite advantage
- Ability to demonstrate a record of achievement in a similar role in an organisation with multiple outlets
- It would be an advantage if applicants have had experience in managing a restaurant
Other Requirements:
- Must be able and prepared to work shiftwork, weekends and public holidays
- Must always be attired to the standard set by the Club
The Management is keen to secure the right person for the job, someone that fits the current team culture and has a genuine 'can-do' attitude. To do this, they are eager to discuss a bonus structure based on very clear and agreed KPI's. There is also recognition that the role requires a balance of administration functions and accordingly, the current structure has been established to accommodate the Head Chef to spend up to a full day completing paperwork etc with the remaining four days spent 'on the tools'.
